Here is a healthy, delicious and cleansing salad that is perfect for lunch on a hot summer’s day! This cleansing summer salad contains an array of summer colours and flavours making in rich in vitamins and nutrients. This recipe is gluten free and suitable for vegans!

- A large handful of baby spinach leaves
- 1/4 cup Chickpeas
- 1/4 cup Baby tomatoes, chopped
- 1/4 cup Cucumber, chopped
- 1 Large carrot, grated
- A handful of pomegranate seeds
- 1T Classic hummus (recipe on blog)
- 1T Guacamole
- A drizzle of lemon juice
- A sprinkle of sesame seeds
- Combine all the ingredients in a salad bowl and enjoy with an ice cold lemon water!
