Meditteranean Chickpea and Mixed Vegetable Salad

This Mediterranean inspired salad is perfect for a healthy, clean and delicious lunch. This salad contains an array of nutrients from all the colourful vegetables, and a healthy source of protein from the chickpeas. This salad may also be a perfect compliment to a roast lamb or grilled fish, enhancing the Mediterranean theme!

  • Preparation: 10 minutes
  • Serves: 4


  • 400g Chickpeas
  • 1/2 A Cucumber, finely chopped
  • 2 Large tomatoes/1 Cup Baby tomatoes, finely chopped
  • 1 Red onion, finely chopped
  • 1 Cup Roasted/Steamed Butternut, finely chopped
  • 1 Block of feta, finely chopped (Optional)
  • A handful of pitted olives, finely chopped
  • A handful of coriander, finely chopped
  • The juice of 1/2 lemon


  1. Combine all the ingredients in a large salad bowl and serve on its own or a side salad for  roasted lamb/grilled fish.
