This Mediterranean inspired salad is perfect for a healthy, clean and delicious lunch. This salad contains an array of nutrients from all the colourful vegetables, and a healthy source of protein from the chickpeas. This salad may also be a perfect compliment to a roast lamb or grilled fish, enhancing the Mediterranean theme!

- Serves: 4
- 400g Chickpeas
- 1/2 A Cucumber, finely chopped
- 2 Large tomatoes/1 Cup Baby tomatoes, finely chopped
- 1 Red onion, finely chopped
- 1 Cup Roasted/Steamed Butternut, finely chopped
- 1 Block of feta, finely chopped (Optional)
- A handful of pitted olives, finely chopped
- A handful of coriander, finely chopped
- The juice of 1/2 lemon
- Combine all the ingredients in a large salad bowl and serve on its own or a side salad for roasted lamb/grilled fish.
