Carrot Cake Overnight Oats

Here is another delicious variation of overnight oats that tastes exactly like a carrot cake! This autumn inspired recipe can be whipped up the night before in a jar and stored in the fridge. Therefore, this is the perfect healthy breakfast for when you are in a rush and can be taken on the go to work or school!

  • Serves: 1
  • Preparation: 5 minutes


  • 1/2 cup Oats
  • 1/2 cup Water
  • 1/2 cup Almond milk
  • 1 Medium Carrot, grated
  • 1tsp Cinnamon
  • 2t Honey/maple syrup
  • A drop of Vanilla Essence
  • A handful of raisins
  • A handful of pecans and walnuts, chopped


  1. Combine all the ingredients in a jar (with a lid) and store in the fridge overnight.
  2. Remove from the fridge the following morning and enjoy!
